When I was brainstorming for a blog name that will stick, The Adventures of Cupcake Girl (which was thought of by my brilliant life partner) was a perfect choice. I was going to start paying for my own domain and I needed something that felt pretty relevant to my blog content – and I just loved writing about my life in the context of bakingscapades, travel, and more eating. However, I kind of got stuck in a rut in the baking department last year. My stress level has reached its all-time high and I guess all that motivation that has had me losing sleep to bake simply drained out.
This year, I wanted to start baking again. But I underestimated the power of procrastination. I kept making excuses until I finally had some push.. and that shove came from Valentines Day lol! It’s funny because aside from the annual baked goods for C, and flowers from him –
We never really make a big deal out of Valentines Day. Personally, I never liked having to go out for the day because traffic in this country is crazy, everything becomes annoyingly overpriced and it is crowded EVERYWHERE (we couldn’t even get Deadpool tickets ugh). C gives me chocolates (he keeps me fat yo) and a number of bouquets (some are bigger than the ones I get for V-Day haha) throughout the year whenever he feels like it, we have fancy dinners at least once a month, and he even buys me ~*stuff*~. I got it good. ❤
Before this turns into an excessively cheesy post, on to the baking part! I have seen so many versions of the S’mores Cupcakes I have got myself convinced that I’m going to make one.. when I get to own a kitchen torch. But hey, C loves s’mores. I’ll indulge him. 😛
I have two huge containers just for cupcake liners (I hoard ‘em!) and decided to use this really cute one. I don’t know where you can buy this here, though, since I got this from Singapore (removed my clothes to make way for baking supplies lol). I didn’t have any crushed graham crackers and frankly, I’m just too lazy to crush them myself, that I just baked chocolate cupcakes. I made some modifications for Bakerella’s chocolate cupcake recipe (personal preference) but it’s yummy as it is. Or do as I do when I’m running low on supplies and buy a boxed mix.
While the cupcakes were in the oven, I started preparing the s’mores toppings! I used Crunch instead of plain ol’ chocolate because C likes this. I like tweaking things to fit his palate. :)No kitchen torch? No problem! I microwaved these babies for 10-15 seconds. I don’t know how long you will have to microwave it to get it to look like a legit s’more (brown edges), but the marshmallow expands in the microwave before melting and I had the EXACT number of marshmallows that I had no room for errors. Hahaha! I also didn’t use the whole bite-sized Crunch bar because it’s too big for the cracker. I don’t wanna clean that mess up!

I’ll shamelessly say that instead of rummaging through our kitchen cabinets, I used the first microwaveable thing I found which was a Lock & Lock cover lol. You can fit in two s’mores in that.
I finished twelve (thirteen if you count my tester) s’mores and had time to spare before the cupcakes were even ready.
I used a butter knife on cupcakes fresh from the oven to spread Nutella on top. I was more generous with it in real life, don’t you worry.
I was honestly supposed to make marshmallow frosting. I had all the ingredients out and waiting for me to get to them. But to sate my curiosity, I tried putting a marshmallow on top and microwaved it for 10 seconds. It looked like real frosting and tasted like one too! So lazy me gets plus points for that.
